Hatzidakis Winery:
The Hatzidakis winery was founded in 1996 by Haridimos and Konstantia Hatzidakis on the island of Santorini, Greece. The Hatzidakis winery was founded in 1996 by Haridimos and Konstantia Hatzidakis on the island of Santorini, Greece. The winery resides in an original cave of Santorini that was abandoned several years ago during the earthquake in the 1950s. By 1997, the Hatzidakis transformed the cave into a small, artisanal winery and Santorini’s famous kouloura vines can be found just outside the cave. Within these vineyard plantings one can also find Santorini’s famous tomato plantings. Most of the vineyards, however, can be found on the outskirts of the village Pyrgos Kallistis at 150-300 meters facing north/northeast. The vineyard covering spans a total of 10 hectares throughout the island plantings. Hatzidakis has always and continues to follow organic vineyard practices as set by EU standards, but has not applied for classification. Currently, Hatizidakis has six wines in their portfolio, not all of which are available in the US. They include: Hatzidakis Santorini: 90% Assyrtiko, 5% Aidani, 5% Athiri Aidani Assyrtiko: 75% Assyrtiko, 25% Aidani Santorini Barrel: 100% Assyrtiko, aged in new oak barrels 10 months Nikteri: 100% Assyrtiko, macerated at lower temperatures Mavrotragano: 90% Mavrotragano, 10% Mandilaria Hatzidakis Vinsanto: 70% Assyrtiko, 30% Aidani Although small in production, Hatzidakis wines are respected throughout the world as a prime example of Santorini’s most famous grape, Assyrtiko. Hugely salty and mineral on the nose right out of the bottle with slow to emerge aromas of lightly melony and orange rind tinged fruit. this gains a hint of apricot with additional air but never loses its piercing seabreeze and salty notes. This is rich yet cutting in the mouth. A real wow wine with terrific energy even though there is substantial weight on the palate and simply terrific depth of fruit. Incredibly electric on the palate with acidity, there’s plenty of fruit to keep things balanced and just when you start wondering if this is a fruit bomb the cutting minerality arrives leaving the palate salty and refreshed on the long, pure finish. An absolute brilliant wine. 94pts

Winemaker's notes: Τype: Dry white wine, Santorini Appelation of Origin of High Quality. Varieties: Assyrtiko 100% A traditional and famous wine of Santorini, with high alcohol degree and strong character. In the past, the vineyards used to harvested over matured, and they used to crash the grapes during the night, in traditional wineries (Canaves).Nikteri was made….For our Nikteri the harvest was very late.We used the traditional way to separate the must. “The nose” is pleasant, with fruity aromas. “The mouth” appears full with long aftertaste. Pairs with: dishes of intense spicy taste, rich in fat fish, white meat or even red meat in light red sauce. Best served at 12-14˚C.It can be aged for 6 years Bottled: In Santorini, 4.800 bottles

ssyrtiko 90% idani 5% thiri 5%. The wine comes out in a light white yellow color which proves the good condition of the grapes and with soft golden shades. The nose is pleasant with strong fruity aromas. The mouth appears full aromatic and the aftertaste has a certain freshness coming from the acidity of the wine which is typical of the island.
