- "A pretty, feminine wine, it displays exotic spicesreminiscent of cinnamon and cloves. It is rich, with a seemingsweetness from the cherry and berry fruit, and enough new French oak tocomplete the sophisticated presentation and allow it to age gracefully.......The two clones from this vineyard were gentlyde-stemmed, cold soaked and fermented separately. Native yeast was usedfor 90% of the must while 10% of each lot was fermented withAssmanshausen and RC212 yeasts to assure the lots would finish dry whenpressed and blended for barrel aging. The clones were aged separatelyin 70% read more...new French oak for 10 months before final blending. We usedbarrels from four different French Coopers to maximize the complexityof the wine. The blended wine was barrel aged an additional 9 monthsbefore bottling for a total of 19 months in new French oak."~Winemaker's notes (hide)
