Winemaker's Notes:

Vintage: Mother Nature came through for us in 1997! Following horrendously light yields from the 1996 vintage She came at us with both barrels loaded in 1997. An early bud break got things rolling in February. Harvest started in a bit earlier than normal but finished very early. Our Cabernet, which usually is picked toward the end of October was ready to pick in early September. Tonnage was high, sugars were stellar and we were not subject to the predicted rains that raked other parts of Northern California. 1997 was a substantial year all the way around! Vineyards: The Cabernet Sauvignon and Merlot grapes that make up our Estate Cabernet blend are grown on our Estate controlled vineyards. The Cabernet Sauvignon is grown in the Oakville AVA, in the heart of the Napa Valley. The Oakville District is renown for its Cabernet and produces wines that are full, lush and very elegant. The Merlot is grown on our new plantings in Oakville and at our Hillview Vineyard, south of Yountville, where Merlot develops a wonderful earthy firmness that blends gracefully with Cabernets from Oakville. Harvest: Sugar/Acid Balance at Harvest Sugar: 24.3 Brix Acid: 0.58 g/100 ml pH: 3.81 Pick Dates: September 30 to October 2, 1997 Fermentation and Aging: Fermentation was carried out over a seven day period in small, temperature-controlled stainless steel tanks at an average temperature of 85 degrees F. After pressing and settling, both the Cabernet and Merlot were transferred to new French Nevers oak barrels for aging. The sweet vanilla character derived from 24 months in the barrels blends well with the black cherry and blackberry flavors and aromas of the wine. Blending with the Merlot occurs just prior to bottling. Finished Wine: Bottling Date: February 2001 Size: 750 ml, 1.5 L, 3 L, and 6 L bottles 100% Napa Valley 100% Estate Grown, Produced and Bottled 86% Cabernet from Oakcross Vineyard 14% Merlot, Hillview Vyd. Total Acidity: 0.63 g/100ml Alcohol: 14.1% by volume Winemaker Notes: Our Reserve Cabernet is distinguished form our Estate Cabernet at the very beginning in the vineyard. Selected portions of our Oakcross Vineyard are allowed further ripening time in order to intensify the rich cherry/berry characters that define our vineyard site. Distinctive notes of plum, black cherry, vanilla and spice are apparent in the extraordinary aroma and flavor profile of this Reserve vintage. A firm yet supple tannin backbone promises exceptional development and complexity from extended bottle aging. Menu Suggestions: The intense black cherry flavors of the 1997 Cabernet Reserve will go beautifully with any red meat. The fat content in lamb, beef, sausages, even buffalo, will help to control the tannin in a very young wine. Pasta with a red sauce, pizza, and burger are all enhanced by the spicy aromas and good balance of fruit and oak flavors.
