Winemaker's Notes:

Vintage: The 1992 growing season started out normally, but the summer was warmer than usual, ripening the fruit more quickly. August was downright hot, bringing sugars up rapidly. After taking a few fruit samples, however, it was clear that while sugars ran high so early in the season, acid levels were also high, which is more typical of a cool growing season. Picking started about 2 to 3 weeks early, but after September 3rd the weather cooled, giving us a break between the white and red grape crush. Two weeks of cool mild weather allowed the red varietals a little extra ripening time for added concentration and depth. Overall, the quality of the 1992 harvest appears to be excellent. Vineyards: The Cabernet Sauvignon and Merlot grapes that make up out Estate Cabernet blend are grown on our two Estate vineyards. The Cabernet Sauvignon is grown at our Oakcross Vineyard in Oakville, in the heart of the Napa Valley. The Oakville District is renown for its Cabernet and produces wines that are full, lush and very elegant. The Merlot is grown at our Hillview Vineyard, south of Yountville, where Merlot develops a wonderful earthy firmness that blends gracefully with Cabernets from Oakville. Harvest: Sugar/Acid Balance at Harvest Sugar: 23.6 Brix Acid: 0.73 g/100 ml pH: 3.63 Pick Dates: 9/28 to 10/9/92 Fermentation and Aging: Fermentation was carried out over a seven day period in small, temperature-controlled stainless steel tanks at an average temperature of 80 degrees F. After pressing and settling, the wine was transferred to small French oak barrels for aging. The sweet vanilla character derived from 23 months in the barrels blends well with the black cherry and blackberry flavors and aromas of the wine. Blending with the Merlot occurs just prior to bottling. Finished Wine: Bottling Date: January 1995 Size: 750 ml, 1.5 L, 3 L, and 6 L bottles 100% Napa Valley 100% estate grown 84% Cabernet from Oakcross Vineyard, Oakville 16% Merlot from Hillview Vineyard, south of Yountville Total Acidity: 0.60 g/100ml Alcohol: 13.9% by volume pH: 3.67 Winemaker Notes: Our Estate Cabernet Sauvignon from the 1992 vintage exhibits the ultimate in character that we expect from our Estate - full, rich aromas and flavors redolent of ripe stone fruits and dark berries. In the mouth, the wine is lush and soft with a subtle tannin backbone that will allow the wine to enhance its beauty with proper bottle age.
