Tasting Notes: This medium-dry sparkling wine is unique and surprising. Served at 6°C with strawberries or other redberries, Cardinal is also an excellent dessert wine, above all with chocolate cake. Percentage Grape: Cabernet Franc 100% Soil: Chalky subsoil locally known as "tuffeau".The minerals in this soil play a vital role in creating wines with a fine sparkle. Another characteristic of this chalky layer is its ability to absorb the sun's warmth and to diffuse it during the night. Vinification Method: Selection of the best juices during extraction, mastery in the choice of the yeast and the cellar master makes the blending of the cuvée. The second in-bottle fermentation enables the bubble formation according to the "méthode traditionelle". The wine is also allowed to age in our cellar longer than the statutory provisions required it. Malolactic: over Alcohol Percentage: 12.3 % Sugar Rate: 13-50 g/l Total Acidity: 3.4 Free SO2: 110
