Tasting Notes: French dry sparkling wine. Serve at 6°C as an aperitif. The perfect complement to shellfish, grilled fish or fish served in sauce, and white meats. Percentage Grape: Chenin Blanc 77%, Cabernet Franc 17% Chardonnay 6% Soil: Chalky soil locally know as "tuffeau". The minerals in this soil play a vital role in creating wines with a fine sparkle. Another characteristic of this chalky layer is its ability to absorb the sun's warmth and to diffuse it during the night. Vinification Method: Selection of grape juices during extraction. Mastery in the choice of yeast and the cellar master make the blending of the cuvée. The second in-bottle fermentation develops the characteristic sparkles. Malolactic: merely began Alcohol Percentage: 11.6 % Sugar Rate: 13-50 g/l Total Acidity: 6.0 Free SO2: 110
