Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Light-weight but persistent, with almond, green fig and melon notes backed by good zip on the finish. Drink now.

Light yellow. Complex nose and palate meld peach, pineapple, snap pea, dusty brown spices and white tobacco, all lifted by a citrus element. Dense, ripe, seamless and concentrated, with its light sweetness and touch of oak nicely buffered by harmonious acidity. A saline, tactile, soil-driven chenin blanc with a honeyed quality on the dry, gripping finish.

From dry-farmed bush vines that are more than 40 years old, the chenin offers intriguing flavors of hawthorne and honey. Therersquo;s a grassy, green cut to the acidity, keeping it frisky and fresh. For roast veal or chicken.

Pale, bright yellow. Complex, fruit-driven aromas of citrus peel, peach and pineapple. On the palate, the winersquo;s fruit is complicated by fascinating nuances of honey, wild herbs and licorice. Brisk, integrated acidity intensifies the flavors and gives structure to the wine. Finishes smooth and persistent, with attractive lingering fruit.
