Food Pairings for Gonzalez Byass Tio Pepe Bone Dry Sherry
Called Palomino Fino Muy Seco from Tio Pepe. It came recommended from Jancis Robinson's book "How to Taste", where she noted that Tio Pepe is a respectable big producer of sherries. This was a fairly light and pleasantly sour beverage. It is quite dry, and it took a little getting used to - I suppose my Yankee palate has been conditioned to believe that sherry is supposed to be something sweet. I got to like it more with successive glasses. Good - but it could have had some more flavor.
