Elegante Dry Fino - Gonzalez Byass: Ein sehr helles, fast schon transparentes Gold, leuchtet im Glas. Die Nase wird von eleganten und leichten floralen Aromen umspielt. Dazu gesellen sich feine Noten von Mandeln und Birnen. Am Gaumen zeigt er sich trocken und frisch, mit einer angenehmen Fülle, feinen Säure und dezenten Mandel- und Nussaromen.Gut Gekühlt ist er ein exzellenter Begleiter delikater Tapas, von Fisch- oder Meeresfrüchten, Hühnchen in sahnigen Saucen (ebenfalls mit einem Schuss Sherry) oder Schweinefilet.Fino ist der leichteste und feinste Sherry. Nach der sanftem Pressung der Palomino-Trauben, wird der Most bei kontrollierten Temperaturen vergoren. Anschließend wird der junge Wein abgezogen und auf einen Alkoholgehalt von circa 15 Vol.% aufgespritet. Die Reife findet in amerikanischen 600-Liter-Eichenfässern statt, die im klassischen Solera-System in langen Reihen übereinander gestapelt wurden. Dabei erhalten die untersten Fässer die ältesten Weine und obenauf liegen die jüngsten Weine. Durch eine maximale Füllhöhe von 4/5 kann der Fino seine charakteristische Flor bilden, dies ist eine ein bis zwei Zentimeter dicke Hefeschicht, die einen luftdichten Abschluss während der gesamten Reifezeit bewirkt. Der Fino wird auf diese Weise mit Nährstoffen versorgt und bildet ein unverwecheselbares Fino-Bukett. A super sweet nose hides a more complex and even drier wine than anyone has a right to expect from the nose of raisins, chocolate, ash, earth, dried mushrooms, toffee, dried apples, and another dose of chocolate.
