Made exclusively from hand-picked Palomino grapes. Only the must from the first pressing is used; it is aged 5–6 years. The result is a Sherry with a pungent bouquet and a perfect balance between fruit flor (a yeast that develops in the casks) and oak. Serve it chilled with almonds olives and shellfish and bring the taste of Spain to your home.

"The estimated period of ageing is some 5 years. All the grapes are from vineyards owned by Gonzalez Byass in the "Jerez Superior" zone. It is crisp, fresh, clean, very dry and fragrant, with a pungent, distinctive "flor" aroma. " -Winery

Tasting Notes:

The wine has a classic fino nose of raw and toasted almonds, nut shells, lemon and orange rind, dried apples and pears, and white cheese rind, along with the salty sea notes that depict vigorous flor growth in a fino Sherry. The mouth has orange and lemon, as well as other citrus. The wine almost seems sweet (don’t worry, it’s not) with marcona almonds in the fairly lengthy, balanced, and almost gentle finish. Drink fresh, chilled from a recently opened bottle.
