Elegant yeast and delicate fruit mingle delightfully in the 2001 Brut sparkling wine from Glenora. The grapes were grown during the warm 2001 vintage, producing moderate strawberry and elegant apple flavors. This sparkling wine was filled into tirage for the secondary fermentation during the summer of 2002, producing a profusion of tiny bubbles that explode to the surface upon opening the bottle. The blend is classically propor- tioned at 63% Pinot Noir and 37% Chardonnay and a finishing dosage of 1.3% RS adds luscious creaminess.
