As usual this contains a majority of chardonnay from Chouilly (45 percent) which is immediately noticeable in the wine s roundness and forward fragrance. Twenty percent of it is from Cuis giving it acidity and freshness while the remainder is from the grand cru villages of Cramant and Oger. It s very sleek and focused despite its creamy richness anchored by a firm spine of acidity and a pure incisive chalkiness and with its long energetic flavors it s already showing well now as a young fresh champagne. At the same time its harmony and vivacity suggests that it should develop well with additional time in the cellar. Peter Liem.

Since 1750, the history of the Gimonnet family is indissociable of the one of the Champagne vineyard.  From the beginning, the Gimonnet family are winegrowers that go about their harvest by the rules of Champagne trade.  Anecdotes, legends and experiences enrich themselves with the passing of the centuries and transmit themselves generation to generation. The know-how and the love of the vine also play an important part in this process. It was during the period between the two great wars that the wine-making activity of the house really began. Around 1935, Pierre drew up the first tariffs. The fresh grape juice cohabitated with the "quiet native wine of Champagne" and a "Champagne Cru" … Practically at the same price. From 1955, Michel Gimonnet, the son Pierre, invested himself with passion and audacity in the development of a range of Champagne "Houses".  He knows each vine of every acre that he trampled on during his youth.  It is he who knows how unique the family vineyard is.  The style of its wines goes some way to express the whole beauty, vivacity, and its race. ichel generated a concern of an almost obsessional perfection; a requirement of such extremes transmitted to its sons, Olive Tree and Didier. Such intransigence implies a severe technical precision, but following the example of the true goldsmiths of wine, the Gimonnet family still work with respect to the hand-crafted work. For the harvest all the grapes are gathered manually.  The grapes are pressed in a traditional manner, automatically divided, into two pneumatic managed presses, since 1996. Conscious of the variety and big wealth of their vineyard, Olivier and Didier Gimonnet put all their work into extracting the most beautiful expressions of the grapes and its “Terroir” (soil).  The vinifications are carried out in small capacity tanks (of 25 to 125 hl), thus preserving the characteristics of the vineyard parcels, linked to the age of the vines, or again to their "climate".
