Ghost Pines Cabernet Sauvignon Winemaker's Blend Sonoma/Napa/Lake Counties 2013

External Review by We Speak Wine:

Our 2013 Ghost Pines Cabernet Sauvignon is rich and offers tremendous depth, opening with aromas of intense blackberry, blackcurrant and dark cherry. You’ll also find aromas of toasty oak, vanilla, and toasted nuts before the palate opens with flavors of Asian spice framed by seamless, mouth-coating ripe tannins. Combining desirable mid-palate viscosity and full, round mouthfeel, our Cabernet concludes with outstanding length accented by mouth-filling black fruit. - Winery This Year’s Grapes: In 2013, the fruit for our Cabernet Sauvignon came from a selection of vineyards within Dry Creek and Alexander Valleys in the Northern Sonoma AVA, from our Ghost Pines and Sage Canyon Vineyards in the Napa Valley AVA, and from the rugged Snows Lake Vineyard in Lake County AVA. Each block was selected for its capacity to add a different dimension to the final blend. 53% Sonoma County: Sonoma County Cabernet gives our wine notes of ripe dark berries and brown spice, as well as outstanding lushness and mid-palate breadth. 29% Napa County: Napa County Cabernet contributes a sense of seamlessness, a textural characteristic we see as essential to great Cabernet. 18% Lake County: Lake County Cabernet grown on volcanic hillsides contributes intense structure, as well as flavors of juicy red fruit and spice to our wine. Winemaking Notes: Each vineyard lot of our Ghost Pines Cabernet was fermented under a unique set of conditions designed to showcase the fruit’s outstanding quality, and blocks were kept separate until blending began following the fermentation period. We began combining vineyard lots from similar regions in the winter and spring, then blended the different regions together during the summer months to create our final blend comprised of 53% Sonoma County, 29% Napa County and 18% Lake County fruit. In all, our Cabernet saw up to 16 months’ aging on French oak, which contributed additional layers of dark chocolate, espresso, toffee and caramel while adding density to the mouthfeel. Varietal Content: 90% Cabernet Sauvignon 5% Petite Sirah 2% Syrah 2% Merlot 1% Petit Verdot Titratable Acidity: 0.57g/100ml pH: 3.7 Alcohol Level: 13.9% Residual Sugar: .30g/100ml
