Food Pairings for Ghost Block Estate Cabernet Sauvignon
Winemaker Rob Lawson notes that 2009 was a cool and steady growing year with good to moderate crop sizes. Extended hang time and even ripening conditions provided excellent quality flavors and tannins. The result was harvesting classic cabernet for Ghost Block from our Rock Cairn vineyard. Finesse oriented with an elegant balance and structure, supported by bright aromas of roses, tobacco and spice. The attack is full on the palate with blackberries, cherries, cocoa, and cinnamon. The ripe mid palate ties together a long finish of cherries, caramel, spice, cassis and coffee.
