Not made in every vintage, this cuvee is a selection of "millerendage" grapes, or grape clusters that are smaller and have a higher skin to juice ratio thereby giving the wines more structure and power than wines made from the rest of the vineyard. This time consuming cuvee is only made when the conditions are perfect to produce the type of berries necessary. The crop is 100% destemmed and slightly crushed before to be transferred into stainless steel tank. The punching of the cap is done twice a day BY FOOT. The wine is then aged in French oak barrel (50% new and 50% one-year old) for 12 months.
