A part of Pomerol's history. The Chateau is located on the site of a hospital built by the Knights of St.John to host the pilgrims on their way to Santiago de Compostella during the Middle Ages. Located on the clay-gravel plateau of Pomerol, are fermented in small cement vats then aged for 18 months in oak barrels (50% new) according to the Bordeaux tradition. Malolactic fermentation in casks, rackings to separate the fine wine from the lees, fining with egg whites and light filtration when necessary. A typical product of the Pomerol terroir - offering a range of black and red fruits in youth, evolving into spiced truffles, musk and leather as they mature. Oak contact brings notes of exotic woods, coffee, cocoa. At a perfect age to be drunk now, can stand up to more years in the cellar. Excellent accompaniment to white and red meats and game, as well as to almond, caramel, vanilla and red fruits desserts.
