Spicy on the nose with pear fruit tones, salty minerals and a touch of glue. In the mouth this is big, rich and polished with great depth of fruit and a zesty yet muscular texture that highlights the dried fruit notes of the mid-palate and the notes of white pepper and salt on the long finish. Wonderful balanced and complex this is beautiful wine. 91pts

Coming from the Greek island of Santorini and made entirely from the indigenous Assyrtiko grape, this smoky white wine is simply a delight. Bright notes of honeysuckle and citrus play against a focused minerality.
A dry, white wine made of the local Assyrtiko grape. The Gai'a winery makes these wines from Santorini and is perhaps the only winery we know of using native yeasts for fermentation. The result is a fabulously floral wine that's mineraled and rich. Drink just lightly chilled.

Thalassitis is a bone-dry wine with a delicate honeysuckle aroma and a crisp, mineral finish. A white wine of a strong personality that will age beautifully for 3-5 years if ideal storage conditions are provided. Served at 10 degrees Celcius. Combined perfectly with seafood and grilled salmon. Can also be served with lamb.
