Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Popped and poured. Black cherries, violets and cinnamon on the nose. The palate is surprisingly lightweight- good fruit and structure, but lacking any real punch- and a bit short. Nice wine, but nothing more than that.

Winemaker's Notes:

"Outstanding: A fresh and quite deeply pitched nose speaks of plum, dark berries, earth and forest floor aromas that give way to detailed and mineral-inflected medium-bodied flavors that possess good energy and precision on the dusty, delicious and persistent finish. This is very Gevrey in character though the usual refinement of Champonnets is present as this is not rustic. Worth considering as a cellar-worthy candidate....91" BH 04/12
