François Raveneau Chablis Premiere Cru Montée de Tonnerre 1997

Really cheesy at first, all cave aged Gruyere and funky damp, under a band-aid fleshiness. The nose cleans up some turning a bit spicy and offering notes of chalky minerality and golden apple. In the mouth this is intense with a salty, almost minty note that is really mouthwatering. Excellent length and the mid-palate offers rich pear and dried peach fruit. This if very food friendly 2008-2015 92pts
