François Pinon Vouvray Brut Non Dosé 2006

Winemaker's Notes:

The Cuvée Tradition is what is termed a vin tendre; the sweetness is between a sec and demi-sec. It has a delicate sweetness in the attack that gives over to a pleasant citrus finish with resonance and length. It has flavors reminiscent of apples and quince with a slightly spicy accent. This wine will continue to develop with age, but is affable and charming when drunk young.

Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

Nice mineral and honey notes on nose. A touch sweet which works well for Chenin. Did not go well with some salumi, but was good with cheese.

Great wine from Astor, imported by Louis/Dressner. Quite sweet to start, but sweetness abates fast and a complex/interesting flavor follows. Herbal and mineral.

A gentle sweetness in the attack brings on flavors of apple and quince, accented with spice, leading to a pleasant citrus finish with resonance and length.

Francois Pinon took over the estate from his father in 1987 and since then has been considered one of the finest estates of Vouvray. The vineyards located in the corniche of the Vallee de Cousse in Vernou is one of the premiers cotes of Vouvray. Francois emphasizes ecologically friendly practices making him a certified organic vineyard and winery. He follows the discipline of plowing the vineyards rather than using chemical fertilizers and he also harvests by hand. The alcoholic fermentation occurs in wood barrels then aged in stainless steel vats. The chenin blanc found in this traditional wine contains a bit of apple sweetness that ends with a resounding taste of delicate citrus.
