WINEMA K ER’S NOT ES We typically harvest Pinot Noir grapes for our Sofia Rosé at a lower brix to ensure a light wine that pairs elegantly with food. Immediately after being picked, the grapes are brought into the winery, crushed and destemmed. For color extraction, the grapes are cold soaked for 48 hours before the juice is separated from the skins. Then, we ferment at a cool temperature in order to retain the crisp acidity that is critical for this style of wine. Wasn't very good as far as zinfandels go. Too acidic and not enough fruit flavor.
90/100 points. Vibrant bouquet of ripe red fruits with a hint cantaloupe and spice. Deep red color fading to rose and clear at the edges. The body of this wine is displayed with a great onset of lemongrass, black currant, and blackberry. This fades into a mild orange/citrus flavor on the back end. Excellent tannins allow for a fantastic mouth feel that holds out for a strong finish. Mild oaking allows for the quality grapes to express their full potential. I would expect nothing less from a Francis Coppola wine.

It's more acidic than the Claret (which is my go to Red period) but it's a pleasure to drink with food. The black cherry is the strongest fruit you'll smell in it and it's light on the oak / tannins.

90 PTS WILFRED WONG. A substantial effort, the fine '07 Francis Ford Coppola is a real winner! Loaded with ripe berry flavors with an alluring accent of dust; drinks exceptionally well now.
Winemaker's notes:We chose to make a 100% Cabernet Sauvignon rather than blend in other varietals so that we could create a real terroir wine with pure varietal flavor. As a result, the Director's Cut Cabernet delivers enticing aromas of cola, cherry, and eucalyptus before revealing dark, rich berries, cassis and clack cherries, which is typical of fruit grown in the illustrious Alexander Valley.
While eyebrows should be raised over the pricing of this wine, it is a straightforward, chewy, coffee and berry-scented and flavored wine, it should be drunk over the next 203 years to take advantage of its ripe fruit.
Ripe berry and spice, rounded with soft tannins and vanilla, highlight this rich, deep purple Cabernet.
I tried this wine one evening over at a friend's house with salisbury steak. Wow! For the price, it is a steal! Diamond is sourced from several locations for specific flavor components the winemaker is interested in bringing out from the terroir. The result of his meticulous selection process is a sweet, fruit forward, very aromatic Merlot. It has a nice acidity that can cut through meat in an instant. Being aged in French oak, sweet vanilla is intermingled throughout. They blend a small amount of Syrah and Petite Sirah to give it that intense color. It is a must try with meatloaf, veal osso bucco or a black and bleu salad.
