WINEMA K ER’S NOT ES We typically harvest Pinot Noir grapes for our Sofia Rosé at a lower brix to ensure a light wine that pairs elegantly with food. Immediately after being picked, the grapes are brought into the winery, crushed and destemmed. For color extraction, the grapes are cold soaked for 48 hours before the juice is separated from the skins. Then, we ferment at a cool temperature in order to retain the crisp acidity that is critical for this style of wine. Wasn't very good as far as zinfandels go. Too acidic and not enough fruit flavor.
90/100 points. Vibrant bouquet of ripe red fruits with a hint cantaloupe and spice. Deep red color fading to rose and clear at the edges. The body of this wine is displayed with a great onset of lemongrass, black currant, and blackberry. This fades into a mild orange/citrus flavor on the back end. Excellent tannins allow for a fantastic mouth feel that holds out for a strong finish. Mild oaking allows for the quality grapes to express their full potential. I would expect nothing less from a Francis Coppola wine.
first sip kick you in the face, but it gets smoother as it gets more aerated. finish relatively smooth.
At twelve bucks a pop and available at most Safeways, this is a safe go-to if you're looking for a Cabernet Sauvignon. It's more acidic than the Claret (which is my go to Red period) but it's a pleasure to drink with food. The black cherry is the strongest fruit you'll smell in it and it's light on the oak / tannins.

Wine Tasting NotesWe blended our Zinfandel with a small amount of Petite Sirah. Half the fruit was crushed whole berry and the must is fermented in open-top fermenters for eight days, with punch downs three times a day, to ensure maximum flavor and color extraction. After fermentation, the wine was aged in French oak adding a wonderful toasted spice and French vanilla essence to its heady aroma of rum raisin with hints of black currant and red cherry. Sweet raspberry jam with currant and red spice flavors are wrapped up in a soft and luxurious texture with moderate tannins.
Boasts a deep purple color and enticing aromas of ripe blueberry, currant, and spice. The palate offers succulent flavors of dark juicy plums, crushed blackberry, and eucalyptus, while a small addition of Syrah adds just a hint of warm spice. Careful aging in small French oak barrels provides a backdrop of sweet vanilla, followed by round, luxurious tannins.
The 2006 growing season was long and cool, allowing the grapes to hang on the vine and mature longer. As a result, this Merlot delivers exceptional concentration and impressive length. To enrich the color, small amounts of Syrah and Petite Syrah are blended in. Then, the wine is aged in small French oak barrels, which lend lovely notes of sweet vanilla to this elegant, full-bodied Merlot.
Our 2007 Francis Ford Coppola Director's Cabernet Sauvignon is absolutely lush and decadent. By using a blend of lightly toasted French and American oak barrels, we were able to give this wine a soft, supple texture and juicy flavors of cherries, blackberries, licorice and spice.
