Food Pairings for Francis Coppola Director's Cut Cabernet Sauvignon
Dark ruby red and full of deep sweet berry aroma, well balanced with smooth non overbearing tannins, cedar, olive and a touch of vanilla. This wine has a lingering sweetness of berry flavor that coats the mouth and palate and is deeply satisfying. I can compare it to the lovely qualities of a Rodney Strong Cabernet with much less vibrating tannins. For 13 to17 dollars a bottle this is a fine every day mellow enough to be a stand alone wine or with rare charred red meat. It also goes well with an aged sharp cheddar on toasted crackers.

Our Blue Label Merlot has brilliant, deep garnet color with aromas of bright red cherries and clove spice. Supple red plum and black cherry flavors highlight the palate, with subtle notes of light milk chocolate and vanilla bean evident on the long finish.
Coppola blush wine shows cool-climate acidity and a fine minerality that make it racy and clean. There also are long hangtime hints of raspberries and strawberries. It s a fine rose to drink with bouillabaisse. From Francis Ford Coppola.
The Francis Coppola Diamond Collection began in 1997 as an ambitious endeavor to make wines of character and complexity at an affordable price. For our Ivory Label Cabernet Sauvignon, we combine fruit from appellations as far north as El Dorado and as far south as Paso Robles.
Harmonious, with plenty of flavors of black cherry, plum, wild berry, anise and leather that fold together nicely into a structured long finish. the tannins are evident and will provide at least 2-3 years of aging.
In the tradition of classic Bordeaux wines, this year’s Director’s Cut Cabernet is blended with some Merlot and Cabernet Franc. The Merlot hails from a mountain vineyard, and adds weight and depth to the blend. The Cabernet Franc, from an alluvial site, adds spice to the aroma.
Classically structured with ripe, supple tannins and an elegant balance of fruit, our 2010 Director’s Cut Cabernet Sauvignon delivers a bouquet of blackberries and sweet cigar box along with rich flavors of cherries, currants, and cassis embellished with a hint of anise and vanilla. While dazzling on the palate now, this wine has the structure and dimension to gain complexity in the years to come.
Notes: 14 months in 50% new French oak, 50% 1-2 year old French oak barrels
