Opened up Five Rivers Cabernet Sauvignon 2007 last night - was a gift for Christmas - the first taste was silky, smooth and yummy, but grew even more delicious as it aired. I am going to recommend this to all my "wine tasting buddies"
slightly watery with a peppery finish. I paired this with some proscuitto and mozzarella.

The wine undergoes 100% malolactic fer mentation to soften tannins, and the riper, fruit forward style emphasizes aromas of blackberry, Bing cherry, cedar box and vanilla, with evident toasty oak from the American and Hungarian oak barrels. As you begin to toast the Goddess of Air, you’ll find vibrant flavors of r ipe cherry plum and blackberry knit together with a solid acid backbone. This Cabernet is fullbodied, with a plush, velvety mouthfeel and resonating fruit forward finish. The tannins are fluid, approachable now but fully capable of maturing with additional elegance. The Goddess is once again proud to offer this as a fine example of Paso Robles best wine.
