Cabernet From A Higher Source The home property for Fife Vineyards is a 56-acre parcel on Spring Mountain at an elevation between 1600 and 1800 feet. Fife Vineyards purchased the land because its soils and exposure are perfect for growing cabernet sauvignon. Virtually every neighbor has a renowned vineyard. This wine is made from a selection of fruit from the neighboring vineyards, and is, we believe, a harbinger of greater wines to come. The Growing Season The 1999 season was nearly ideal. We had good winter rains that ended in early spring. Then flowering was about normal and gave a good start to the season. The most significant quality factor was a long, cool, and unusually even ripening season. This promoted small berries and long hang-time, which allowed the fruit to develop richness and concentration. In September the weather warmed up a bit and assured full and complete ripeness of most varieties. The Winemaking Our winemaking philosophy is simple: obtain grapes with personality, handle them minimally, and then focus on blending to bring out nuance and character in the wine. We depend upon the vineyard to create the fruit, the density and the concentration. In the winemaking process we seek to assure balance, elegance, texture and length of flavor. Tasting Notes Forward aromas of black currant, cedar, and mocha are echoed in the bright and lingering flavors. Even in its youth, the wine is surprisingly approachable, yet shows a refined intensity and a silky tannin structure that promises to reward those who cellar it. We like to pour this wine into a decanter since aerating it seems to magnify the wine's softer more juicy side. Download Printable Version
