"Tasted assembled a good half year before bottling, the Fevre 2012 Chablis Les Preuses beautifully exhibits the intrigue and allure inherent in this great site. Smoky black tea, mint, wild forest fungus, kelp and musk rise from the glass, to be joined on a silken yet bright palate by the saline-sweet, saliva-inducing savor of fresh scallop and the succulence of lime-laced white peach. This lingering beauty ought to prove memorably intriguing and delightful through at least 2022. As Seguier sees it, the parcel of Fevre’s Preuses located on the border with the Cote de Bouguerots serves for mineral character, while a strip that extends up into the heart of Preuses conveys its exotic animal (or shellfish) and fungal aspects." -Wine Advocate (93-94 Points)

Founded in 1959, William Fèvre owns the largest array of Grands Crus Vineyards (15.2 hectares) and benefits from ideal conditions  to produce excellent Chablis. A category leader in the US, William Fèvre Domaine wines are farmed organically and biodynamically. Imported in the U.S. by Maisons and Domaines Henriot Americas along with sister Houses Champagne Henriot, Bouchard Pere and Fils (Burgundy) Chateau de Poncie (Fleurie) and Beaux Freres (Oregon). The history of wine-making in Chablis goes back to 865 AD with the development of vineyards by the monks of Saint-Martin-de-Tours on slopes facing the Serein River that cuts through that village. At that time and for the centuries that followed, the Chablis wine trade grew substantially thanks to the waterways that made it possible to supply Paris from Auxerre. With the French Revolution, estates changed hands but remained successful, and the total vineyard surface area reached 38,000 hectares. The end of the 19th century saw the coming of phylloxera in 1887, which wreaked havoc and reduced the vineyards to almost nothing. It was only at the beginning of the 1960s, when the Chablis vineyard surface area was less than 1,000 hectares, that Chablis wine production took off again with the growth of mechanization and setting up of anti-frost systems (another plague for the vines of the region). The current productive vineyard surface area is 4,580 hectares. Read less

Pale green-tinged yellow. Pure vibrant aromas of citrus pith spring flowers and peppery spices. Quite silky and elegant on the palate; in a more feminine style than the Valmur or Bougros but bright and highly concentrated with impeccably integrated acidity. This really blossoms on the tactile very long finish which dusts the palate with minerals lemon and pepper. Stephen Tanzers IWC.

Vibrant and totally alive in the glass the 2012 Chablis Les Preuses beautifully expresses the qualities of the vintage and the two parcels Fevre owns in this hallowed site. The 2012 impresses for its remarkable balance of intense fruit mineral cut and floral overtones all of which meld together to form an impeccable gracious wine of pure breed. Today the Preuses is understandably quite tightly wound but that just bodes well for the future. Antonio Galloni.

This is arguably the most elegant wine in the range with its ultra-pure aromas of quinine oyster shell mineral reduction and floral elements. There is a caressing even seductive mouth feel to the beautifully well-delineated and concentrated medium-bodied flavors that possess an almost delicate quality before culminating in an almost startlingly explosive finish that just goes on and on. This bone dry effort is an exercise in harmony and grace or otherwise expressed a classic Preuses. 2022+ Burghound.

Pale greenish-yellow. Subdued aromas of crushed rock menthol and mint. Bright dense rich and backward if without quite the sheer mineral tension of the Valmur. Penetrating citrus and stone flavors carry through to a whiplash of a finish. A pure expression of stone with terrific intensity. Winemaker Seguier noted that "we would have lost the terroir character if we had picked these grapes later." Stephen Tanzers IWC.

The 2012 Chablis Bougros Cote Bouguerots shows the personality of this steep south-facing site in spades. Next to the straight Bougros the Cote Bouguerots is richer deeper and more overt in its fruit. A racy intense Chablis the Cote Bouguerots is all about volume on the palate while floral and mineral notes play supporting roles. Layers of fruit fill out the broad-shouldered frame nicely. This is every bit as elegant as the Valmur with a cool pure and ripe nose of white flowers lemon wet stone and sea breeze. There is a driving minerality to the gorgeously textured intense and tension-filled medium weight flavors that possess excellent volume while sliding gracefully into a bone dry cuts-like-a-knife finish. This just exudes essence of Kimmeridgian as blind it would be just about impossible to guess anything but Chablis. 2022+ Burghound.
