The history of wine-making in Chablis goes back to 865 AD with the development of vineyards by the monks of Saint-Martin-de-Tours on slopes facing the Serein River that cuts through that village. At that time and for the centuries that followed, the Chablis wine trade grew substantially thanks to the waterways that made it possible to supply Paris from Auxerre. With the French Revolution, estates changed hands but remained successful, and the total vineyard surface area reached 38,000 hectares. The end of the 19th century saw the coming of phylloxera in 1887, which wreaked havoc and reduced the vineyards to almost nothing. It was only at the beginning of the 1960s, when the Chablis vineyard surface area was less than 1,000 hectares, that Chablis wine production took off again with the growth of mechanization and setting up of anti-frost systems (another plague for the vines of the region). The current productive vineyard surface area is 4,580 hectares. Read less

We drank this wine while vacationing in California recently. We each enjoy different types of white wines - from wooded chardonnay to fruity pinot grigio, our tastes vary. Yet, this Chablis won over the four of us. It has enough structure without overwhelming those who prefer a lighter wine. A light bittersweet entry to a long and mellowed finish this wine is excellent with lighter seafood and poultry. It's also one to drink on a warm summer's day!

A more complex if not fresher nose features notes of lemon zest, oyster shell and white flower that precede solidly well-concentrated, textured and delicious flavors that possess good balance on the moderately persistent finish. Pale, bright green-tinged yellow. Subtle floral perfume of lime, spices and caraway seed. Elegant and fine-grained, with a pliant texture, very good depth and a light touch to the spice and citrus flavors. Finishes subtle and long, with strong linger... Stephen Tanzer's IWC. The Chablis Village is fresh and lively on the nose with Granny Smith, a touch of pear and morning dew. The palate has good weight, a little fatness in tune with the vintage with a persuasive, apple and pear-tinged finish. Fine. Neal Martins Wine Journal. Pale lemon-green color. Highly expressive and pure aromas of lime zest, nutmeg, ginger and quinine. Fat on entry, then stuffed with ginger, citrus and stone fruit flavors. Pale, bright yellow-green. Citrus, ginger and mint aromas lifted by a peppery element. Dense, pure and fresh, with very good definition to its white peach and spice flavors. Pale, green-tinged color. Rather withdrawn nose hints at spearmint, spices, menthol and crushed stone lifted by a whiff of lime oil.
