Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Grapes are harvested by hand during the first 15 days of November, when they are overripe and touched with botrytis (noble rot), then dried on straw mats for several months. After a soft press, clarified must is fermented in new Troncais oak barriques. The resulting wine remains in the oak a further 18 months prior to bottling and release. Rich, sweet and fragrant, with persistent flavors of apricot and mango and a suggestion of mint in the finish.
