Privilegio Feudi Di San Gregorio Grapes are harvested by hand during the first 15 days of November, when they are overripe and touched with botrytis (noble rot), then dried on straw mats for several months. After a soft press, clarified must is fermented in new Troncais oak barriques. The resulting wine remains in the oak a further 18 months prior to bottling and release. Rich, sweet and fragrant, with persistent flavors of apricot and mango and a suggestion of mint in the finish.
