A decade after the first release from his Quintessa estate, Agustin Huneeus felt the thrill and excitement of a new endeavor beckon. The underlying premise for all of the wines he has ever produced has been that great wines must be a reflection of a great vineyard. Faust is not. Instead, Faust is a tribute to Napa Valley’s noblest grape—full-bodied, decadently rich and unctuous Cabernet Sauvignon. Faust also honors the legend of Dr. Faust, a scholar and respected man of society who was tempted by the Devil to seek new renewed passion and youth in exchange for his soul. Faust is indeed the fruit of renewed passion for Agustin, though Mephistopheles has not yet appeared to claim his soul. To capture the complexity and diversity of the Napa Valley, Agustin takes bold and beautiful fruit from Quintessa that doesn’t fit his famous meritage blend’s elegant and finessed profile, and complements it with fruit from his vineyard in Napa’s up and coming Coombsville region and small lots of grapes that come form some of the valley’s best mountain and valley vineyards, from St. Helena to Yountville. At 30 minutes, the nose is rich with sweet cherry and whiffs of spring florals. At the same time, the palate is spicy and structured and nicely framed, though the wine begins to fall apart after an hour and a half, leaving a juicy center and intermittent pops of pepper and spice, but without broad structure. The wine reduces over time to a thinner version of itself, with the structure and acidity dropping out more and more at two hours and beyond.

The wine making takes place at Quintessa'a state-of-the-art gravity flow facility. 77% Cabernet Sauvignon, 20% Merlot 2% Petit Verdot and 1% Cabernet Franc. The grapes are double triaged for quality and the wine is aged for 19 months in 30% new French oak barrels. Concentrated and refined with notes of black currants, bing cherry, cocoa and toast. Incredibly open, the fragrant nose is full of sweet black cherry and cassis along with light floral and earth notes. A touch more earth, as well as minerality and spice, appear on the palate, serving to complement the ample fruit. Full bodied, and ... John Perry. The 2007 vintage of Faust delivers classic Napa Valley Cabernet aromas plush with blackberry, cassis, red plums and dark chocolate undertones.
