Fattoria Petrolo Sangiovese Blend Toscana IGT Terre di Galatrona 2003

Winemaker's Notes:

Appellation: Tuscany IGT First Vintage Year: 1994 Grape Variety: 100% Merlot Climate Conditions: spring progressed normally though early and hot. Summer was suddenly very hot and droughty. This created the need for constant monitoring and selecting grapes with a very low yield per vine plant (about 350 gr. per plant). The intense reduction of grapes in the end allowed for a balanced and complete maturation. The premature harvest (August 20) allowed the whole fruit to be maintained, neither over mature or cooked, but rather with a good acidity despite the read more... high pH. Harvest: Galatrona is made from pure Merlot grapes. Despite that 2003 is not an authoritative vintage year for Merlot due to the excessively hot climate that lasted for the whole summer, the premature harvest, the extremely favorable pedoclimatic conditions and the meticulous care of the vines enabled us to obtain surprising results. Vinification: the maceration of the skins lasted for approximately 14 days. The pumping of must over the grape dregs was done with considerable care and very frequently to allow a complete extraction of the skins. The malolactic fermentation took place in barriques, with a rapid outset and regular development. Aging: after the malolactic fermentation, the wine remained in new barriques of French oak for a period of 18 months. During this phase the wine was left for the first 6 months on the fine dregs, paying particular attention to its development. This process allowed for greater complexity. After bottling, the wine began its usual refinement period of about 6 months. Organoleptic Characteristics: Galatrona 2003 has a deep and balanced aroma, and in the mouth its complexity dazzles with hints of very mature red berries neither overripe nor typical, despite the premature harvest. The surprising finish and length keep this wine up to its usual standard of excellence, even in a difficult vintage year for Merlot like 2003. Alcohol Content: 13.80 % vol. Total Acidity: 6.00 g/l Total Dry Extract: 36.90 g/l Polyphenols: 3300 PH: 3.70

Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.
