Winemaker's Notes:

1991 was the fifth year of drought in California, but late spring rains replenished the soils so that our vines did not suffer and were able to take advantage of an extremely long and good growing season. Harvest did not begin until we were well into October, when the moderate days and cool evenings allowed the fruit to gradually come to perfect maturity. The long growing season resulted in a wine that has not only great depth, richness and length, but also shows unusual roundness in the mouth. The three varietals used in this wine, Cabernet Sauvignon, Cabernet Franc and Merlot, were carefully monitored, then hand picked from our estate, The Stelling Vineyard, located in Oakville directly behind Far Niente. The clusters were then sorted by hand to assure the finest quality prior to crushing. Following the fermentation in stainless steel tanks and several weeks of maceration, each lot was evaluated. Only those lots of wine that came together to best express the house style of Far Niente were included in the blend that was assembled into 100% new French Oak Barrels for twenty months of aging. In a final step to soften the wine prior to bottling, each barrel was fined with three fresh egg whites. The 1991 Far Niente Cabernet Sauvignon has rich and deep berry flavors complimented by toasty oak aromas, as well as the typically "dusty" components traditionally found among the finest soils of the western vineyards of Oakville. The vintage has inexplicably produced a wonderful extra dimension of roundness. The blending has helped produce a wine that is soft and mouth filling now, while further bottle aging will reward your patience with a longer and more velvety texture.
