Falernia Pedro Ximenez Riserva 2010
The grapes have been hand picked into small bins and immediately pressed. The juice has been clarified by natural sedimentations and fermented in stainless steel tanks at 14-16 C with selected yeasts. At the end of the fermintation the wine has been racked and aged in stainless steel tanks at low temperature. No malolactic fermentation. Cool tartaric stabilization at -4 C before bottling.
Albarino like with tart lime zest, lemon zest nose. Moderate plus acidity light body and medium intensity, dry with moderate plus length, low alcohol. Great citrusy notes, would be great with food, very refreshing.
