Its high altitude vineyards in Somontano, covering 600 hectres of land, are a perfect microclimate for producing stunning wines from both international and native grape varieties. Vintage: 2009 Grapes: 100% estate grown Cabernet Sauvignon grapes. Vinification: The grapes were manually harvested and macerated on their skins until the must took on a rosé colour. Once the residue was removed at 8C, the clean must was fermented in temperature controlled stainless steel tanks at 16C. Serve: Chilled at 8-10C to accompany pasta dishes, poultry and soufflés. Taste: Elegant and fruity with flavours of blackcurrant, gooseberry and strawberry. Full bodied, the balancing acidity gives the wine a lively and supple character.
