- Emmanuel Rouget was a good deal more upbeat in describing his 2005 compared to the very difficult time that he had in 2004 and well he might have been as his '05s are terrific. Rouget was candid, telling me point blank that he would like to make a 2005 every year. The flowering was a bit late but with the warm and even weather, the vines caught up quickly. There was a fairly heavy fruit set with big berries so we dropped some fruit in early August in those sectors that weren't hit by hail in May like Echézeaux was. We began picking under very warm weather and I decided to refrigerate the grapes when read more...they arrived at the cuvérie to slow down the fermentations. Overall yields, including the Bourgogne, came in around 37 hl/ha with excellent sugars, indeed I chaptalized only one wine. Because the skins were quite thick and the juice to solid ratios were high, I limited the cuvaison to around 15 days. The malos were done fairly quickly, which is to say by March. For me, 2005 is a blend of 1995 in terms of its structure but with the freshness of 1991. And it's a vintage that should age well as it has everything it needs, particularly excellent balance. Note: from vines situated in Les Chouillets and Aux Lavières A gentle touch of wood frames a distinctly earthy mix of red and black fruit nuanced by hints of game and underbrush that can also be found on the sweet, round and more concentrated flavors that are more firmly structured and deep on the beautifully balanced finish.
