- Emmanuel Giboulot, whose first vintage was 1985 and now emphasizes a biodynamic approach to viticulture across the 10 ha of vineyards he works, said that he did not need to correct for anything in 2003, explaining that because of the methods we use, our vines naturally find what they need. Was there stress in the vineyards in a vintage like this? Of course. However, I am convinced that Nature will find a way if you just let it. We had perfectly normal sugars at between 12.4 and 13% and good overall acid/fruit balance. While the wines are different, I quite like them anyway. The Giboulot reds are pretty read more...and very pure examples of pinot, emphasizing high-toned fruit and usually represent fine value. There is a bit more complexity here with very round, sweet and opulent flavors that are also well concentrated and delicious. I would serve this well chilled to add a sense of vibrancy and cut because otherwise, it may seem a bit flat if served too warm. (hide)
