Emiliana Organic Adobe Merlot a Selection of Wines Or Other Items Chile Rapel Valley Merlot 2009

Winemaker's Notes:

Rafael and José Guilisasti were visionaries in the late 1990s when they saw that the market was beginning to change and that consumers worldwide were becoming more aware of the products they were consuming, not only for health reasons, but also with respect to their social and environmental impact. They therefore asked winemaking consultant Alvaro Espinoza to join them in the process of converting a conventional Chilean winery into one that was 100% organic and biodynamic with the firm objective of creating wines of the highest quality with great respect for nature. Now, after more than a decade, what began as a dream has become a complete portfolio of wines backed by major national and international awards and recognition and that meet the new need of today’s consumers. Adobe Merlot shows intense ruby-red in color with great depth and brilliance. The nose is dominated by red fruit (berries) and complemented with a touch of toast, vanilla, cocoa, butter, and toffee from the oak. The palate presents good body and is silky, velvety, and well-balanced due to its ripe tannins. This tremendously flavourful wine achieves a perfect balance between the fruit and the use of French oak and ends with a long finish. A wonderful and inexpensive merlot fabulously paired with seared pork tenderloin with plum glaze, braised chicken legs or an indulgent chocolate dessert.

Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.
