Einaudi Dolcetto di Dogliani 2003

Winemaker's Notes:

The wine making Fermented in steel tanks under strict temperature control (28/32°C) racked after 4-6 days, decanted, given malolactic treatment and completed always at a controlled temperature. Decanted a number of times during maturation in steel tanks, held in oak, bottled at the end of the year, and ready for drinking in February-March of the second year. The wine A high quality wine which ages well over 3 to 5 years, ruby red which tends towards violet; with a rich fruity bouquet, full bodied and well structured with an elegant, balanced and spicy taste giving a long and persistent final note. Stemming from Dolcetto grapes meticulously selected from the best rows of every “sorì” of the Einaudi estate in Dogliani. Of a dry and moderately acidic taste, with an alcohol content which often exceeds 13.5%vol., it is matured for over a year in steel and wood. The refinement in glass completes its rich and intense taste and the formidable structure of this classic wine makes it worthy of competing with wines produced from grapes considered of more “noble” origins.
