Winemaker's Notes:

The grapes were harvested upon full maturation at the end of September. The wine was vinified using an average maceration time of 8 to 10 days in small stainless steel tanks in order to promote greater surface contact between the skin and the must, which increases the extraction of polyphenols substances at a temperature of 26-28°C. Upon separation of the juice and the solids, the wine was refined in large oak casks until the completion of malolactic fermentation. In order to retain the characteristic fruity flavors of the wine, it was refined in stainless steel tanks.

Ecco Domani Merlot displays a deep red color tinged with ruby-red reflections. Aromas of black cherry are evident, with a hint of plum on the nose. This wine exhibits soft tannins, with notes of spice, cherry and licorice on the palate. Our Merlot is a perfect match for a wide range of foods, particularly tomato-based pasta dishes, poultry and grilled meats.
