"Eben has blended 80% Syrah 20% Mourvedre from four different Swartlandmountain soils (granite, clay, gravel, slate), vinifying the fruit for 6 wks in20 hl open wooden fermenters before ageing the wine for 24 months in Bordeauxbarrels. Such was the tricky dry vintage that a severe sorting of Eben's 7hectares was required to ensure the best fruit, yielding a tiny quantity (16hl/ha) of wine blessed with both power freshness.
