The Drylands Sauvignon Blanc is a direct reflection of the terroir where the grapes are grown. The fruit for this wine is grown in dry, deep, fine alluvium soils that encourage a long, cool ripening period. A variety of trellising systems add complexity to the finished wine. - I tasted this wine with my wine group. The wine had two in the group exclaim, "peach!" when they first smelled it. This was in addition to the standard smell of citrus and fresh-cut grass you expect in a Sauvignon Blanc. This wine has a bit more body than others of its type, but the acids keep it crisp and lively. Flavors of lime and honeydew popped up on the tongue, with a little bit of tart apple in the finish. The alcohol taste was subdued, making this an easy wine to drink with the first cheese, a white stilton with apricots (Whole Foods).
