All of the Domaine Drouhin Pinot Noir is handpicked into 25-pound totes, then hand sorted and destemmed at the four-level gravity flow winery. Fermentations are long and careful. By the middle of November, all of the wine was safely in barrel. Approximately 20% new oak is used with the Pinot Noir, which allows the character of the wine and vintage to show through. Barrels are custom made in Burgundy, using oak from France's best forests. The goal is to produce Pinot Noirs with balance, elegance and finesse.

Earthy on the nose with a slight hardness to the autumnal, forest floor notes that cover the jammy and yet not sweet core of fruit. This is very savory and very quinine- and floral-scented. Big acids on entry but they are joined by some slightly astringent red fruits that fill the mouth, lending this a fine texture. This remains a bit lean on the mid-palate, but with good aromatic intensity to the complex, spicy red fruit. The wine finishes a bit short and raw. This needs some time to fully integrate. 88pts

The 2007 Pinot Noir triangulates beautiful fruit, beautiful structure and beautiful balance. On the palate, the wine shows classic Dundee Hills character, with loads of spice and red fruits.
