Vinification: After crushing, destemming, pressing and cold temperature settling, the wine was fermented at a low temperature. The fermentation was stopped before dryness to preserve the fruity character of this wine. The wine was racked, blended, filtered on diatomaceous earth, fined, cold stabilized and adjusted for bottling. Description: The 2005 Semi-dry Riesling, presenting a light golden hue, shows a fruitier less mineral character than the dry Riesling. The bouquet is dominated by ripe fruity aromas of melon, pear and pineapple. The mouthfeel is very pleasant with a good balance between the residual sugar and the acidic backbone typical of Riesling with a long finish. This Semi-dry Riesling is very enjoyable with spicy food or just on its own. Analysis: Alcohol: 11.5 % Acidity: .75 g/100 ml pH: 3.16 Sugar: 4.5 %
