Vinification:
This sparkling wine, made in the traditional Cremant style, is made entirely from estate grown Pinot Meunier grapes. Whereas a small portion of the Pinot Meunier was directly pressed whole-cluster in membrane presses, the larger part was vinified as a Rose wine with skin contact at low temperature to ensure minimum extraction of undesirable phenolics. Following the Cremant method, the Celebre Rose is aged "sur lies" after the estate tirage. Finally, the Celebre Rose is riddled by hand or read more...gyropalette prior to disgorging.
