Vinification:
The 2007 Pinot Noir was picked late to enhance flavor development. After crushing and destemming, the Pinot Noir was fermented in open-top fermenters to allow punch-downs and pump-overs. After a short maceration, the grapes were pressed and the juice was settled. After malolactic fermentation, the wine was aged in tanks, from which it was removed and blended prior to bottling.

- Not sure if I'm crazy about this one. It's very light, almost effervescent, but it doesn't do anything. The flavor just sits on my tongue and doesn't go anywhere or blossom into anything. Every sip would be forgettable - although that's not much help given the flashing lights in my rear-view mirror.
