Winemakers Notes
Vinification:
The 2007 Pinot Noir was picked late to enhance flavor development. After crushing and destemming, the Pinot Noir was fermented in open-top fermenters to allow punch-downs and pump-overs. After a short maceration, the grapes were pressed and the juice was settled. After malolactic fermentation, the wine was aged in tanks, from which it was removed and blended prior to bottling.

Reviews for 2007 Vintage
Not sure if I'm crazy about this one. It's very light, almost effervescent, but it doesn't do anything. The flavor just sits on my tongue and doesn't go anywhere or blossom into anything. Every sip would be forgettable - although that's not much help given the flashing lights in my rear-view mirror.
immediate bing cherry, cranberry, and layers of red fruit dominate the nose. more earthy and spicy on the palate, complex and exotic with a very nice finish
Cherry, strawberry, vanilla and spice aromas start this pretty Pinot. Fruity and friendly but backed by a nice spicy complexity, the wine will pair well with wild game or lamb.
Shows all the classic attributes of Pinot Noir from an exceptionally ripe vintage: deep burgundy color; cherry, plum, blackberry and vanilla aromas with cloves and forest floor undertones; impressive ripe tannins and a long, clean finish.
Showing well despite its age, with good black cherry, toast and spice notes. Slightly firm finish, but the fruit hangs on well enough. Drink now.
Despite this wine's light color, it carries a lot of flavor intensity. Cherry cola aromas gradually give way to coffee, caramel and bitter chocolate notes. Crisp acidity brings all the flavors together, forming a firm backbone - it will be interesting to see if this is one Finger Lakes Pinot that can age.
The intense cherry, mulberry flavors and riveting spice aromas suggest Burgundy, but this just happens to be one of New York State's finest red wines.
This new Salmon Run Pinot Noir has been hand crafted in a light bodied fruity style. The lovely aromas of cherries, plums, cloves and spices compliment the soft bodied weight of a wine that's easily consumed on an everyday basis.
