Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Deep Ruby red in color. The nose shows anise, and earthy minerals which seem to be covering the fruit some. Firm tannins, with a balanced acidity. Dry lingering finish that continues to evolve showing raspberry, cherry, and chocolate notes. 4/5 [NR]

Wine Tasting NotesInky deep cherry color. Intense, elegant and expansive nose combined with complex aromas. Massive tannins, ripe flavors of oak and black fruits. Chocolate, coffee, blackberry, licorice and mint meld in a luscious blend. Excellent tannic structure, broad, supple, substantial palate of ripe fruits and wild berries. Lingering finish.

Winemaker's Notes:

Emeritus means deserving in Latin. The wine is a blend of Cabernet Sauvignon from our pioneering vineyard planted in 1974, and from the first Syrah and Petit Verdot plots in all of Spain. The varietals are aged separately for 12-15 months, the best barrels are selected, then blended and aged and additional 12-14 months.
