The history of wine-making in Chablis goes back to 865 AD with the development of vineyards by the monks of Saint-Martin-de-Tours on slopes facing the Serein River that cuts through that village. At that time and for the centuries that followed, the Chablis wine trade grew substantially thanks to the waterways that made it possible to supply Paris from Auxerre. With the French Revolution, estates changed hands but remained successful, and the total vineyard surface area reached 38,000 hectares. The end of the 19th century saw the coming of phylloxera in 1887, which wreaked havoc and reduced the vineyards to almost nothing. It was only at the beginning of the 1960s, when the Chablis vineyard surface area was less than 1,000 hectares, that Chablis wine production took off again with the growth of mechanization and setting up of anti-frost systems (another plague for the vines of the region). The current productive vineyard surface area is 4,580 hectares. Read less

An outstanding wine. One of the most sensational Chablis I have had, and I am a Chablis drinker . I had it with fresh steamed Lobster . A great pairing. A rich mellow wine with a lingering consistant taste

this is not showing much at the moment- really no nose to speak of and the palate is very tight as well- a mineral driven texture and weight that suggests something damn good buried underneath the structure. I'll wait 6 or so years before opening another one.

one night one this was closed up completely- showing absolutely nothing. it opened up very nicely on night two- very linear and detailed- lovely stony presence with classic chablis notes. won't open another for a while.

Sage leaves, rosemary, quartz, and iodine are found in the nose of the 2004 Chablis Valmur (domaine). A wine of awe-inspiring precision as well as depth, it coats the palate with sea shells, minerals, fresh herbs, and liquefied rocks. Though I freely admit to having a special fondness for the Valmur vineyard, this wine hits the taster deep in the soul. Anticipated maturity: 2008-2015.

The 2004 Chablis Les Preuses (domaine) reveals a nose of intense purity. Its aromas of gravel, stones, candied citrus fruits, pears, and hints of toast lead to a crystalline, medium-bodied character. This feminine effort s broad personality is filled with minerals, stones, iodine, and fresh herbs whose flavors linger in its amazingly long, detailed finish. Projected maturity: 2007-2014.

Minerals, chalk, rosemary, thyme, and white pepper are found in the nuanced aromatics of the sublime 2004 Chablis Bougros Cote Bouguerots (domaine). Produced from south-facing vines that bask in the sun whenever it appears, this wine reveals astounding amplitude, depth, concentration, and power. Its rich core is sappy, silky-textured, and presents intense liquefied stone flavors. Notes of fresh mint leaves appear in this offering s prolonged finish. Projected maturity: now-2016.
