The history of wine-making in Chablis goes back to 865 AD with the development of vineyards by the monks of Saint-Martin-de-Tours on slopes facing the Serein River that cuts through that village. At that time and for the centuries that followed, the Chablis wine trade grew substantially thanks to the waterways that made it possible to supply Paris from Auxerre. With the French Revolution, estates changed hands but remained successful, and the total vineyard surface area reached 38,000 hectares. The end of the 19th century saw the coming of phylloxera in 1887, which wreaked havoc and reduced the vineyards to almost nothing. It was only at the beginning of the 1960s, when the Chablis vineyard surface area was less than 1,000 hectares, that Chablis wine production took off again with the growth of mechanization and setting up of anti-frost systems (another plague for the vines of the region). The current productive vineyard surface area is 4,580 hectares. Read less

Pale, green-tinged yellow. Compellingly pure, complex nose melds citrus fruits, ginger, crushed rock and minerals. Wonderfully dense and vibrant in the mouth, conveying an impression of power and structure. This silky, voluminous wine boasts incredible depth without any impression of weight. Even though the straight Bougros is finer than usual, it is no where near as elegant and pure as its counterpart as the high-toned and strikingly layered nose of oyster shell, mineral reduction and perfumed cool green fruit is extremely seductive and... Light yellow. Aromas of pineapple, nectarine and white peach, lifted by a whiff of apple skin. Dry and firm-edged, with a bitter quality adding interest to the pit and orchard fruit flavors. Racy acidity carries the fruit on the firm, focused finish. This grown-up rendition of chardonnay would work well by itself.

A tame nose of cream and toast leads to a fairly weighty palate of butter and apples that’s punctuated by attractive guava notes. The nutty finish is just this side of medium. Drink up.

Distinctly floral, with a Viognier-like note weaving through the pure apple and pear fruit, lingering nicely on the gentle finish. Drink now.
