The history of wine-making in Chablis goes back to 865 AD with the development of vineyards by the monks of Saint-Martin-de-Tours on slopes facing the Serein River that cuts through that village. At that time and for the centuries that followed, the Chablis wine trade grew substantially thanks to the waterways that made it possible to supply Paris from Auxerre. With the French Revolution, estates changed hands but remained successful, and the total vineyard surface area reached 38,000 hectares. The end of the 19th century saw the coming of phylloxera in 1887, which wreaked havoc and reduced the vineyards to almost nothing. It was only at the beginning of the 1960s, when the Chablis vineyard surface area was less than 1,000 hectares, that Chablis wine production took off again with the growth of mechanization and setting up of anti-frost systems (another plague for the vines of the region). The current productive vineyard surface area is 4,580 hectares. Read less

Minerals, chalk, rosemary, thyme, and white pepper are found in the nuanced aromatics of the sublime 2004 Chablis Bougros Cote Bouguerots (domaine). Produced from south-facing vines that bask in the sun whenever it appears, this wine reveals astounding amplitude, depth, concentration, and power. Its rich core is sappy, silky-textured, and presents intense liquefied stone flavors. Notes of fresh mint leaves appear in this offering s prolonged finish. Projected maturity: now-2016.

Lemon spice anise and hazelnut on the complex nose along with a suggestion of oyster shell. Then densely packed and sweet with superb energy and cut. There s an almost iodiney reserve here and yet the wine is almost accessible today owing to its juicy sweetness of fruit and silky texture. Very elegantly styled Chablis less minerally and austere than the Valmur but with compelling richness for the vintage. Stephen Tanzers IWC.

The 2004 Chablis Les Preuses (domaine) reveals a nose of intense purity. Its aromas of gravel stones candied citrus fruits pears and hints of toast lead to a crystalline medium-bodied character. This feminine effort s broad personality is filled with minerals stones iodine and fresh herbs whose flavors linger in its amazingly long detailed finish. Projected maturity: 2007-2014.
