Domaine William Fèvre Chablis Grand Cru "Les Preuses" Premier Was 2007

Winemaker's Notes:

“A somewhat riper but more reticent nose features the barest hint of wood spice that marries well with the explosive green and yellow fruit aromas and fresh, full, powerful, beautifully delineated flavors underpinned by a driving minerality and stunning length. Given the superb balance and firm acid spine, this should age effortlessly for at least 15 years, perhaps longer. In sum, this is a strikingly elegant, classy and altogether refined effort with flat out marvelous complexity with buckets of classic Chablis character. A stunner of a wine.” 94 pts, Allen Meadows’ Burghound Report

The history of wine-making in Chablis goes back to 865 AD with the development of vineyards by the monks of Saint-Martin-de-Tours on slopes facing the Serein River that cuts through that village. At that time and for the centuries that followed, the Chablis wine trade grew substantially thanks to the waterways that made it possible to supply Paris from Auxerre. With the French Revolution, estates changed hands but remained successful, and the total vineyard surface area reached 38,000 hectares. The end of the 19th century saw the coming of phylloxera in 1887, which wreaked havoc and reduced the vineyards to almost nothing. It was only at the beginning of the 1960s, when the Chablis vineyard surface area was less than 1,000 hectares, that Chablis wine production took off again with the growth of mechanization and setting up of anti-frost systems (another plague for the vines of the region). The current productive vineyard surface area is 4,580 hectares. Read less

Star bright, lemon, yellow apple and minerals, lead to citrus, golden delicious fruit with good mouth feel, minerals and a bit of gun-flint before a long, generous finish.

Chardonnay is probably my least favorite grape unless the wine has bubbles. But I found the Chablis to be rather good with a nice tart citrus bite.

My group found this wine buttery on the palate, cut with a fresh, lemony end. It's a good summer white- refreshing, with a slight linger on the palate.

Buttery? from lower review...um no way. This is the opposite of buttery. An high acid as a bad thing in another review? duh it's Chablis, not Napa Valley. What's next Barolo bad because it's high tannin? This is a classic Chablis, clean, bright slatey. For $20 this is a great bottle of Chard.

Pure white chalk, chicken stock, and shrimp shell reduction seem to be the dominant denominations of Fevre's 2007 Chablis Bougros Cote de Bouguerots (from the steep, riverside portion of Bougros). Green plum, cut grass and chive flavors mark this tightly wound white. A mineral note emerges as this plays out on the sharply etched finish. Needs time. Sweet lime, buddleia, lily, and hints of the ocean scent Fevre's 2007 Chablis Bougros. William Fevre founded the Domaine de la Maladière with his first harvest in 1959. For many years, Fèvre (who to this day enjoys a very good reputation as a defender of historically renowned terroirs), has worked each plot skillfully so as to make wine whose personality reflects the authenticity of the famous chalky, Kimmeridgian soils from which they spring. In 1998, the venerable Henriot family from Champagne succeeded him bringing along a very personal expertise in Chardonnay. This Chablis (100% Chardonnay) reflects their refined style. No oak aging, just stainless steel tanks and full malo-lactic to bring out the intensity of the fruit.
