- Nathalie Tollot said that things were tough in 2004 because we did both a leaf thinning and a green harvest right before the hail storm hit. Thus there was nothing to protect the grapes and we lost a lot of fruit. Thankfully, almost immediately after the storm, absolutely ideal weather arrived and while it obviously couldn't replace the lost quantity, it at least dried out the berries and prevented the development of rot as well as brought the remaining fruit to excellent ripeness. In fact, we started picking on the 20th of September, bringing in sugars between 12.5 and 13% and while there was read more...certainly some sorting work in the vineyards, it was quite a bit less than we imagined going in. As to the vinification, we certainly tried to limit the extraction a bit, doing only a 24 hour cold soak and shortening the total cuvaison by two days. The malos were long though we bottled at the same time as usual, which is to say the end of January. We didn't fine though we did do a very light polishing filtration. This offers a step up in aromatic complexity with a stylish mix of red, black and violet aromas infused by warm earth and underbrush that introduce rich, full and very firmly structured flavors that offer good depth and a sweet, serious and notably austere mouth coating finish. This is a big and serious wine where the hallmark austerity will require a few years in bottle to round out. (hide)
